Everyone is busy but we need to make time for ourselves and our family. Here is a healthy recipe that is easy to make, great for the family and a major time saver!
Ingredients:
1 can (15 ounces) chickpeas, drained and rinsed
1 zucchini, chopped
1 cup broccoli florets
1 bell pepper, sliced
2 cloves garlic, minced
1 tbsp olive oil
1 tsp paprika
1/2 salt (to taste)
1/4 black pepper
Optional lemon juice, fresh herbs, or shredded cheese
Instructions
Heat olive oil in a large skillet over medium heat.
Add garlic then cook 30 seconds until fragrant.
Add zucchini, broccoli, and bell pepper. Saute’ 5 to 7 minutes until vegetables begin to soften.
Stir in chickpeas, paprika, cumin, salt, and pepper. Cook another 5 minutes, stirring occasionally.
Taste and adjust seasoning. Add a squeeze of lemon or sprinkle of herbs/cheese if you desire.
Serve warm as is over cooked rice or with toasted bread.
